By definition, it must be made in its north east region of France - simple!

The majority of Champagne will be dry, made typically from either Pinot Noir,  Pinot Meunier or Chardonnay grapes.

Whilst made in the same way as Champagne, Cava originates from Spain, and produced with different grapes. 

A sparkling dry wine from Italy, which comes either as a fully sparkling Spumante or a fizzy Frizzante
